Redwood Llamas Back Country Gourmet Meals

This menu has evolved from 30 years of llama packing.
“One of the best things about purchasing llamas was that I didn’t have to eat freeze dried food any more, thanks to the llamas’ capabilties to carry food!” says Bill Redwood owner of Redwood Llamas and an avid backpacker for 15 years.
In our comfortable camps we have an outfitter wing (shelter) to be able to sit outside and enjoy the wonderful scenery. We have tables to cook on and serve the food, and also provide you with fold up chairs.
Our meals are designed not only to provide the necessary calories needed when hiking the trails but also to taste good! There are also vegetarian options, and we offer a variety of salads as well as wine with every dinner.
We will take meal requests from the menu below. If this is a custom private trip we should be able to meet most of your meal choices. However if the trip is a combined group, we will design the menu according to combined group desires. A variety of energy snacks are also provided daily for our clients to meet your needs on the trail.


Breakfast served with fresh locally roasted coffee and a variety of creamers, green, black tea, and assortment of herbal teas also hot chocolate.
Bread is also baked locally.
French toast with real maple syrup, scrambled eggs and ham, bacon or sausage
Breakfast burritos made with flour tortillas potatoes, green chili, sauté onions, black or pinto beans, cheddar cheese, eggs and sausage or ham.
Vegetarian burrito potatoes, green chili, sauté onions, black or pinto beans, cheddar cheese, and eggs
Huevos Rancheros made with corn tortillas, eggs, refried beans, green chili, onions, guacamole, sour cream and salsa
Smoked salmon with scrambled eggs and Swiss cheese served with homestyle potatoes and bagel
Oatmeal with granola, yogurt, fruit, raisins, assorted nuts and berries with fresh bread
Vege scramble with ham, bacon, or sausage available on the side, and home fried potatoes.


Sandwich Bar:
Deli sliced meats; turkey, ham, roast beef, chicken, and pastrami.

Sliced chesses: swiss, provolone, pepper jack, and cheddar.

Tuna fish salad and chicken salad Peanut butter and home made jellies and jams.

Available sides and condiments: cream cheese, hummus, mayonnaise, mustard, olives, cucumbers, butter or iceberg lettuce, red onion, tomatoes and peppers.

Breads; variety of sandwich breads, flat bread, bagels, and tortillas.

Chips Cookies, fiber and protein bars

Fruit: apples and oranges


Tuna or Yellowtail sashimi with soy, pickled ginger and wasabi

Sushi Roll Smoked Salmon with pineapple habanero or cherry chipotle cream cheese on flatbread crackers.

Red pepper humus with rice crackers Chips with salsa and guacamole Sliced cheeses and fruit

Fresh Garden Salad: spring mix, red onion, tomatoes, cucumber, assorted mini bell peppers, and radishes with raisins, variety of nuts and jalapenos on the side.

Caprese Salad: garden fresh sliced tomatoes, mozzarella and fresh basil drizzled with aged balsamic vinegar and cold pressed olive oil

Spinach Salad: Spinach, walnuts, raisins and apples

Dressings available: balsamic vinegar and cold pressed olive oil, poppy seed, honey mustard and Italian vinaigrette

Main Course
Chicken Marsala with crimini mushrooms, serve on a bed of fresh pasta noodles with stir fry seasonal vegetables and ciabatta bread

Chicken Francesca with capers, white wine and lemon, served on fresh linguini noodles with stir fry seasonal vegetables and ciabatta bread

Southwestern chicken breast with green chiles and melted cheddar cheese served with Spanish rice and refried pinto beans

Stacked chicken or cheese enchiladas served with refried pinto beans and Spanish rice Homemade chicken, pork, beef or vegi tamales served with refried pinto beans and Spanish rice.

Homemade meat lasagna served with sourdough bread

Vegetarian lasagna served with soy vinaigrette pork tenderloin and sourdough or French baguette

Rosemary leg of lamb or rack of lamb served with eggplant parmesan or stuffed Poblano pepper and sourdough or French baguette

Salmon with pineapple glaze served with quinoa & brown rice with garlic, and seaweed and squid salads
Beef tenderloin and shrimp with rosemary and garlic potatoes wedges and roasted vegetables.
